Before the categories

Six notes that apply
everywhere.

The same handful of questions comes up in every matrix. Settle these first and the category modules become a checklist rather than a research project.

01 · Solubility
Inulin is water-soluble and dissolves faster in warm liquid. Add to the water phase under agitation, or pre-blend with other dry ingredients, to avoid lumps.
02 · Heat
Pasteurisation, UHT and baking at near-neutral pH are generally well tolerated. The small free-sugar fraction (glucose, fructose, sucrose below 14 g/100 g) can contribute to browning, so watch colour.
03 · Acid
Long exposure to low pH combined with heat can hydrolyse fructans into free sugars, reducing declared fiber. Evaluate acidic, hot-processed products over their full shelf life.
04 · Moisture
The powder is hygroscopic. Specification moisture is at most 4.5 g/100 g. Keep bags sealed, store at room temperature and limit open-bag time on the line. Shelf life is 36 months under specified storage.
05 · Dosing and mixing order
Dose into the water phase or the dry blend, before fat and before any acidification step where the process allows. Typical inclusion levels are formulation-dependent. Evaluate with the technical team.
06 · Sensory baseline
White to off-white powder, no peculiar odour, slightly sweet taste. Inulin content above 86 g/100 g by specification. It adds body without adding a flavour of its own.

Dairy & yogurt

Fiber with body.
Major rolePrebiotic fiber + texture improver
BenefitImproves creaminess, mouthfeel and fiber content.

Inulin integrates into the aqueous phase of a creamy matrix, adding solids and body while contributing fiber. Longer-chain character is typically favoured where creaminess and fat-reduction support matter.

Texture demonstration · conceptual
Example formats
  • Set and stirred yogurt
  • Drinking yogurt and lassi
  • Flavoured milk and milkshakes
  • Dairy desserts and puddings
  • Fresh cheese and dairy spreads
What inulin does here
  • Fiber enrichment in the water phase without changing the recipe’s visible character
  • Body and creaminess support where fat is reduced
  • Sweetness-neutral solids: the powder is only slightly sweet
  • Prebiotic positioning alongside live cultures, subject to applicable regulations
Process considerations
  • Disperse into milk under agitation before heat treatment and homogenisation. Hydration is faster in warm liquid
  • Fermented products become mildly acidic: pasteurise before culturing rather than holding an acidified mix hot
  • Long exposure to low pH combined with heat can hydrolyse fructans. Evaluate fiber retention over shelf life
  • Check interaction with proteins and stabilisers for syneresis and viscosity
  • Typical inclusion levels are formulation-dependent. Evaluate with the technical team

Functional beverages

Soluble fiber, quiet sweetness.
Major roleFiber enrichment + prebiotic
BenefitAdds dietary fiber without significantly increasing sweetness.

Inulin dissolves to deliver fiber and solids with low visual and sensory impact. Clarity, acid exposure and the thermal process are the questions to settle early.

Example formats
  • Fiber-fortified waters and ready-to-drink functional drinks
  • Gut-health shots and tonics
  • Powdered drink mixes and stick packs
  • Dairy and plant-based protein drinks
  • Juice-based functional beverages
What inulin does here
  • Soluble fiber with little effect on sweetness or flavour
  • Adds body and solids to thin beverages
  • Prebiotic positioning for gut-health concepts, subject to applicable regulations
  • Dissolves to a clear-to-slightly-hazy solution depending on concentration. Verify clarity in your matrix
Process considerations
  • Dissolve in warm water under agitation, then blend with the remaining ingredients
  • Acidic beverages that are hot-filled, pasteurised or retorted: long exposure to low pH plus heat can hydrolyse fructans, so evaluate fiber retention through process and shelf life
  • Where the process allows, minimise hot hold times at low pH
  • Powdered mixes: dry-blend and check flow and caking, as the powder is hygroscopic
  • Typical inclusion levels are formulation-dependent. Evaluate with the technical team

  • Coated nuts and clusters
  • Chocolate inclusions for bars and cereals
What inulin does here
  • Replaces part of the bulk and solids that sugar provided
  • Fiber enrichment for labelling
  • Mild sweetness that rounds off high-intensity sweeteners
  • Texture support in chewy and aerated formats
Process considerations
  • Chocolate: add dry during refining and conching. Low moisture matters, and the powder’s moisture specification (≤4.5 g/100 g) helps keep the mass workable
  • Viscosity of reduced-sugar masses differs from sucrose masses. Adjust fat and emulsifier and refine to target particle size
  • Gummies and boiled sweets are cooked hot and often acidic: fructans can hydrolyse under long low-pH heat, so evaluate
  • Hygroscopic powder: protect intermediates and finished pieces from humidity
  • Typical inclusion levels are formulation-dependent. Evaluate with the technical team

  • Fillings, creams and icings
  • Pastry and laminated doughs
What inulin does here
  • Fiber enrichment without coarse particles
  • Moisture management and a softer bite over shelf life
  • Partial sugar or fat reduction support through added solids
  • Binding of fine dry ingredients in low-moisture doughs
Process considerations
  • Dry-blend with flour and sugar before adding liquids to avoid lumping
  • Account for water uptake: dough rheology and batter viscosity shift, so re-balance water
